Breakfast on the Go ~ Egg Muffins
For my Breakfast Skipping Friends, these will keep for 3 days in the fridge and give you plenty of protein to keep you energized and your blood sugar stable til lunchtime! Great for an afternoon mini meal or snack too!

Spray a cupcake pan with non-stick spray
Fill each cup with your favorite ingredients, ham & broccoli, chicken & carrots, spinach w/feta & tomatoes, steak & bell peppers or whatever you have in your fridge. (if you add all veggies raw they will cook to perfection during the baking process)
Mix 1 egg per cup a splash of milk and pour into cups just below the rim
Top with shredded or sliced cheese
Bake at 425 degrees for approx 20 min
Let cool before removing from pan
Can be stored in the fridge for no more than 4 days. Warm them in the microwave for a quick breakfast on the go!
